This is a phenominal side dish that goes fantastic with grilled chicken, seafood or beef. I got this recipe from the lady who runs our local produce market and is a fantastic cook. Enjoy Ingredients:
2 vidalia onions quartered |
2 red bell peppers cored seeded and quartered |
1/2 pound fettuccine cooked |
2 tablespoons olive oil |
2 cloves garlic minced |
1/4 teaspoon crushed red pepper flakes |
1/2 cup dry white wine |
1/2 cup chicken broth |
3/4 cups whipping cream |
1/3 chopped fresh parsley |
Directions:
1. Grill onions and peppers until charred but not burnt. 2. Place peppers in a paper bag to cool then remove skins when cool. 3. Slice onions and peppers into strips then set aside. 4. While pasta cooks heat 2 tablespoons olive oil in large skillet over medium high heat. 5. Saute garlic and red pepper flakes for 1 minute. 6. Stir in wine, chicken broth and whipping cream. 7. Bring to a boil then reduce heat and simmer 3 minutes. 8. Stir in onions, peppers and 1/3 cup chopped fresh parsley. 9. Toss with drained pasta and serve. |
