Shrimp in a simple parsley pesto sauce Ingredients:
3 tablespoons parsley |
1 tablespoon capers |
1/3 clove garlic |
1 tablespoon lemon juice |
1 dash dijon mustard |
1/4 teaspoon salt |
2 tablespoons olive oil |
1 medium zucchini |
1 cup cherry tomatoes |
3 oz linguine |
3 black olives |
1 cup asparagus |
Directions:
1. Mix top 7 ingredients in a food processor. Slowly add olive oil. Slice zucchini lengthwise and drizzle with olive oil and salt and pepper and grill. Add shrimp to pan and cook till done. 2. Cook pasta as directed 3. Slice asparagus into one inch pieces...boil till tender, drain, set aside. 4. Toss shrimp, tomatoes, zucchini, asparagus and pasta together with green sauce and serve. |
