1 cup ketchup |
1 tablespoon prepared white horseradish |
1 tablespoon fresh lemon juice |
1/4 cup chopped parsley |
2 scallions, minced |
1 1/2 lbs large shrimp, shelled and deveined |
2 tablespoons olive oil |
Directions:
1. In a small bowl, combine ketchup, horseradish, lemon juice, parsley and scallions. 2. Cover and refrigerate until serving time. If using bamboo skewers, soak in water at least 3o minutes. 3. Prepare hot grill. 4. Thread shrimp on skewers and brush with olive oil. 5. Grill, turning once until shrimp are pink and begin to curl; 4-6 minutes. 6. Serve with cocktail sauce for dipping. |
