Grilled Red Snapper With Spicy Lime Soy Sauce |

Adapted from Sam Choy's Polynesian Kitchen. Prep time includes marinating time. Ingredients:
3 tablespoons lime juice |
1/2 cup soy sauce |
1 tablespoon oyster sauce |
2 tablespoons brown sugar |
1 teaspoon garlic and red chile paste |
2 teaspoons fresh ginger, minced |
2 tablespoons scallions, chopped |
2 tablespoons peanut oil |
4 red snapper fillets (scaled, skin on, about 6 ounces each) |
cilantro (to garnish) |
lime wedge (to garnish) |
Directions:
1. Combine lime juice, soy sauce, oyster sauce, sugar, chili garlic paste, ginger, scallions and peanut oil in a large bowl. 2. Add fish and marinate for 2 hours, turning occasionally. 3. Preheat grill to medium-high. 4. Grill fish 4-10 minutes, depending on thickness. 5. Garnish with cilantro and lime wedges. |
