Grilled Red Snapper With Spicy Lime Soy Sauce

Adapted from Sam Choy's Polynesian Kitchen. Prep time includes marinating time.
Ingredients:
3 tablespoons lime juice
1/2 cup soy sauce
1 tablespoon oyster sauce
2 tablespoons brown sugar
1 teaspoon garlic and red chile paste
2 teaspoons fresh ginger, minced
2 tablespoons scallions, chopped
2 tablespoons peanut oil
4 red snapper fillets (scaled, skin on, about 6 ounces each)
cilantro (to garnish)
lime wedge (to garnish)
Directions:
1. Combine lime juice, soy sauce, oyster sauce, sugar, chili garlic paste, ginger, scallions and peanut oil in a large bowl.
2. Add fish and marinate for 2 hours, turning occasionally.
3. Preheat grill to medium-high.
4. Grill fish 4-10 minutes, depending on thickness.
5. Garnish with cilantro and lime wedges.
