After giving away 100 of my tortillas, (I needed the freezer space), I needed something to whittle my own stash down some. I got the idea from a recipe from Kraft Foods and, since I didn't have any jared salsa, I made my own. Read more . (Qui-Zelda?!? Oh yea, one of Mike's buddies had never had Quesadillas before and that is how he read it on a mexican resurant menu!!) Ingredients:
1 sm can diced tomatoes with chilis |
1 sm onion diced |
1 cup yellow corn (canned or thawed) |
1/2 tsp cyanne pepper (or more to your taste) |
1 tsp cummin |
1 tbs chopped black olives |
1 tbs cilantro (or parsley in a pinch - same family) |
shredded cheese (your choice) |

Directions:
1. Start your grill so it's ready to go. 2. Combine everything except cheese and tortillas 3. Chill until grill is ready 4. Sprinkle 2 Tbs cheese on half of each tortilla, follow that with salsa. 5. Fold tortillas and press to seal 6. Grill 1 to 2 minutes on each side, or until cheese is melted and qui-zelda is lightly browned on both sides. 7. Before the family grabs them, cut them in half to make a nice presentation. 8. Serve with sour cream or guac, or more salsa. |
