Grilled Prawns With Tropical Fruit |

A delicious dish for the BBQ . I found this in a Womans Weekly Low carb Low Fat cook Book . Post for Zaar tour 4 Serve with Herb Sauce Ingredients:
24 uncooked large shrimp |
1/4 medium pineapple, chopped coarsely |
1 mango, coarsely chopped |
1 large banana, coarsely chopped |
1/4 cup loosley packed mint leaf |
2 tablespoons lime juice |
1/2 cup fresh mint leaves |
1/2 cup fresh parsley |
1 garlic clove |
2 tablespoons lime juice |
1 tablespoon olive oil |
Directions:
1. Make herb sauce. 2. Cook prawns on heated lightly oiled grill pan or your grill on the BBQ until colour has changed and is cooked throughout. 3. cook fruit on the same grill until slightly brown. 4. Combine prawns and fruit in a large bowl with the mint leaves and juice.Serve into individual bowls and drizzle on herb sauce. 5. Blend the 1/2 cup of mint leaves and the remaining ingredients and process until combined. This will be the Herb Sauce. |
