An easy and delicious side dish to go with grilled chicken. I coat the chicken with the oil left in the bowl. My family absolutely loves this. Ingredients:
4 small to medium potatoes |
1 t butter |
1 t oil (i use canola, you can use any) |
1/4 t onion powder |
1/4 t garlic powder |
1/8 t salt (more can be used if desired) |
1/8 t black pepper |
aluminum foil |
cooking spray |
Directions:
1. Preheat grill 2. In a larger bowl, melt the butter 3. Add the oil, onion and garlic powder, and salt and pepper 4. Scrub the potatoes and slice them a 1/4 inch thick 5. As you slice each potato toss it in the oil in the bowl 6. Keep slicing and tossing the potatoes in the bowl 7. After all the potatoes are in the bowl, use a spoon to make sure each slice is covered in the oil/butter mixture 8. Take a long piece of aluminum foil (it needs to be long enough to fold over and wide enough to be crimped along the edges) 9. Spray the center portion with the cooking spray, leaving a couple inches along the edges unsprayed 10. Place the potatoes on the foil in a layer as flat as possible 11. Fold the foil over and crimp the edges to make an air tight seal 12. Place on a medium high heat grill for 20 to 25 minutes 13. Remove from grill to a platter 14. Open foil packet 15. Enjoy! |
