GRILLED PORTOBELLO MUSHROOMS WITH MANGO CHUTNEY This recipe came from an estate sale. I obtained it when I purchased the family collection from the Wall Estate in Quinlan Texas in 1997. Ingredients:
4 portabellas mushrooms |
1 large ripe mango |
1 red bell pepper |
1 jalapeno pepper |
2 teaspoons soy sauce |
2 teaspoons vinegar |
1 teaspoon miso |
1 bunch arugula lettuce |
Directions:
1. Carefully remove stems from mushrooms and clean thoroughly. 2. Marinate in vinegar, miso, soy sauce for one hour. 3. Dice mango and bell pepper then chop jalapeno and toss with vinegar. 4. Clean lettuce and separate into single leaves. 5. Grill the mushrooms on both sides. 6. When grilling the top turn mushroom 90 degrees halfway through to get diamond pattern. 7. To serve fan 3 lettuce leaves on plate and center a mushroom and top with a dollop of chutney. |
