Grilled Pork Tenderloin With Savory Slaw |

This is a great recipe made on the BBQ and is impressive to boot. Ingredients:
2 lbs pork tenderloin |
2 tablespoons garlic oil or 2 tablespoons vegetable oil |
1/2 cup barbecue sauce |
4 cups coleslaw mix (with carrots) |
1 medium onion (sweet onion like vidalia, walla walla or texas sweet) |
1 red pepper, thinly sliced |
1/2 cup ranch dressing |
2 tablespoons cilantro, chopped fine |
2 teaspoons lime juice |
Directions:
1. To cook the pork- prepare the grill with med hot fir. Brush pork with oil. Grill 8 min per side or until thermometer inserted in the thickest part reads 150 degrees. Brush pork generously with bbq sauce and cook about 1 min more per side. Remove from grill, cover with foil and let stand 5 min before slicing. Discard sauce. 2. To make slaw – In a large bowl, combine coleslaw mix, onion and bell pepper. In a small bowl, combine ranch dressing, cilantro and lime juice; toss veggie mix until just coated. Refrigerate until ready to use. To serve place slaw in center of platter and surround with sliced tenderloin. |
