This is a delicious recipe! Made a rice lover out of me immediately! Sweetened with brown sugar and spiced up with chile pepper, this tropical-themed rice is a perfect summer side dish. Ingredients:
1 tablespoon dark brown sugar |
1/2 teaspoon ground chipotle chile pepper |
1/4 teaspoon salt |
1 pineapple, cored, cut into 1/2 inch-thick slices |
2 tablespoons toasted sesame oil |
3 scallions, sliced |
1 garlic clove, minced |
4 cups cooked rice, preferably basmati |
1/2 teaspoon salt |
Directions:
1. Prepare grill for direct-heat cooking. 2. Combine sugar, chile pepper and salt; sprinkle over both sides of pineapple slices. 3. Grill, turning once, until browned, 3 minutes per side. Cool slightly; cut into chunks. 4. In large nonstick skillet heat oil over medium heat; add scallions. 5. Cook, stirring, until golden, 3 minutes. 6. Stir in garlic; cook 1 minute. Add rice, salt and pineapple; cook, stirring, until heated. |
