This is so simple, and a great end to a barbecue. Ingredients:
4 slices fresh pineapple (about 1 1/2 in) |
2 lemons |
2 teaspoons honey |
ground pepper |
Directions:
1. Slash the tops of the pineapple in a crisscross pattern. Broil until the pineapple turns caramel, but not brown. 2. Boil the lemon juice and honey in a saucepan for 2-3 minutes. Remove from heat to cool, and season to taste with pepper. Serve as is, or with a scoop of ice cream. (You could also serve with ricotta or goat cheese). |
