This is a recipe that my cousin learned to make when he was stationed on a base in Japan. He and a bunch of his buddies cooked for their wives on the weekends and this is one he perfected. Tastes great. Enjoy Ingredients:
2 zucchini sliced |
2 yellow squash sliced |
1 spanish onion cut into large chunks |
1 package italian herb with tomato soup mix |
1/4 cup olive oil |
8 ounces penne pasta cooked and drained |
3/4 cup diced roasted red pepper |
1/4 cup red wine vinegar |
Directions:
1. Arrange zucchini, yellow squash and onion on grill. 2. Combine soup mix and oil the brush over vegetables and grill 5 minutes turning once. 3. Toss pasta, vegetables, roasted peppers and vinegar then serve warm or room temperature. |
