Grilled Pancetta Wrapped Asparagus |

Thin sliced pancetta goes a little crisp,salty porkiness complimenting the asparagus. Ingredients:
1 lb. medium asparagus(1/2 thick;12-15 |
1tbs extra-virgin olive oil |
12-15 thin slices pancetta(1/4 lb) |
4(12 0 wooden skewers,soaked in water 30 mins |
Directions:
1. Prepare grill for direct-heat cooking over med hoat coal 2. Trim asparagus to 6 long,toss with oil and 1/4tsp pepper in small dish. Wrap middle of each asparagus spear with one slice of pancetta. Tread 3 or 4 wrapped asparagus 1/2 apart onto each skewer. 3. Oil grill rack,then grill asparagus,uncovered,turning,until pancetta is golden brown in spots and asparagus is crisp tender,about 6 mins 4. If you aren't able to grill outdoors,they can be broiled 3' from the heat,turning,about 5 mins. Asparagus can be wrapped in pancetta 1 day ahead and chilled! |
