From PreventionGuide Flat Belly Foods. We used dried oregano because we couldn't find fresh oregano. We also use light extra virgin olive oil. Instead of grilling we broiled the chicken after marinating for 2 hours. Ingredients:
2 1/4 lb chicken breast (6 halves) |
1/2 cup dried oregano |
4 scallions, trimmed and thinly sliced |
1/2 cup balsamic vinegar |
1/3 cup extra virgin olive oil, light |
2 tsp black pepper |
3/4 tsp salt |
Directions:
1. Place chicken in shallow dish 2. Whisk all other ingredients in small bowl 3. Pour mixture over chicken and flip to coat both sides 4. Cover and chill for about 2 hours, turning once 5. Cook chicken for 10-12 minutes, turning once 6. Serve with steamed brown rice mixed with some wild rice and mixed vegetables. |
