Grilled Mozzarella Chicken Sandwiches

Ingredients:
2 tablespoons light mayonnaise
4 teaspoons sweet pickle relish
8 (1.2-ounce) slices whole-grain bread
1 (4.9-ounce) package roasted skinless, boneless chicken breast, thinly sliced
4 (0.7-ounce) slices part-skim mozzarella cheese
2 cups trimmed arugula or spinach
butter-flavored cooking spray
Directions:
1. Combine mayonnaise and relish; spread evenly over 4 bread slices. Top evenly with chicken, cheese, and arugula. Top with remaining bread slices. Coat both sides of sandwiches with cooking spray.
2. Place a nonstick skillet coated with cooking spray over medium-high heat. Add 2 sandwiches to pan; cook 2 to 3 minutes on each side or until lightly browned. Repeat with remaining sandwiches.
