Grilled Marsala Chicken & Parmesan Salad |

This is an easy salad to make and can be planned a day ahead. Prep time does not include overnight marinade. Ingredients:
2 boneless skinless chicken breast halves |
1 1/2-2 cups marsala wine |
2 cloves garlic, chopped |
1/2 teaspoon dried thyme |
salt & pepper |
1 tablespoon olive oil |
1 tablespoon red wine vinegar |
3 tablespoons fresh grated parmesan cheese |
1/2 head romaine lettuce |
1/4 large red onion, sliced thin |
1/4 cup black olives, sliced |
Directions:
1. Place chicken in a bowl with a lid, add marsala to cover. 2. Add garlic, thyme, salt& pepper. 3. Marinate in fridge overnight. 4. Grill chicken (indoor or outdoor grill), basting often with marinade. 5. Dressing: mix olive oil, vinegar, and parmesan. 6. Toss shredded lettuce, red onion, and olives. 7. Drizzle with dressing and top with slices of grilled chicken. |
