Grilled Marinated Zucchini |

Easy and quick side dish, with a twist on traditional recipes. Ingredients:
2 medium zucchini, washed, unpeeled, sliced lengthwise |
4 tbsp soy sauce |
3 tbsp lemon juice |
2 tbsp olive oil (spanish extra virgin is the best) |
freshly ground black pepper |
salt (i use maldon) |
1 cup plain yogurt |
1 cup cherry tomatoes |
Directions:
1. In a small bowl whisk together soy sauce, lemon juice and olive oil. 2. Place zucchini on a shallow pan and brush both sides with soy mixture. Let rest for about 1 hour. 3. Pat dry zucchini and place on a hot grill until brown, about 4 minutes, depending on the grill. Turn and season with salt and pepper. Let cook the other side for 3 more minutes, season again with salt and pepper and place on serving plate. 4. Serve with beaten yogurt and cherry tomatoes. 5. It´s a perfect side dish for meat, poultry or fish. |
