Grilled Marinated Portabellas, Peppers and Onions |

From a local community cookbook. Not sure how many this serves but I will guess. Ingredients:
6 portabella mushrooms |
2 red bell peppers |
2 yellow bell peppers |
2 red onions |
1/2 cup balsamic vinegar |
2 teaspoons fresh thyme, chopped |
1/4 cup olive oil |
1 teaspoon lemon zest |
Directions:
1. Cut the veggies into slices. 2. Combine marinade ingredients. 3. Marinate the slices for several hours. 4. Grill. |
