Grilled Maple Salmon With Pineapple |

I had pineapple-glazed salmon at Cap City for Sunday brunch with my mother a while back, and I have been searching for a comparable recipe ever since. I found this on , and I cannot wait to try it. Ingredients:
1/4 cup maple syrup |
1 tablespoon dijon mustard |
2 teaspoons ginger |
4 slices fresh pineapple |
4 salmon fillets |
Directions:
1. Preheat a lightly oiled grill to medium-hot. 2. In a bowl, combine maple syrup, mustard and ginger. 3. Generously brush pineapple slices with mixture and then salmon. 4. Place the salmon on the grill and brush again with marinade. 5. Grill pineapple for 2 to 4 minutes per side. 6. Grill salmon for 3 to 5 minutes per side, or just until cooked through. 7. Serve salmon topped with pineapple slice. |
