Ingredients:
2 tablespoons fresh lime or lemon juice
2 tablespoons olive oil
1 tablespoon honey
2 garlic cloves, crushed
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon freshly ground pepper
4 (4-ounce) mahimahi fillets
cooking spray
2 cups shredded romaine lettuce
Directions:
1. Prepare grill.
2. Combine first 7 ingredients in a zip-top plastic bag. Add fish; turn to coat. Let stand 10 minutes. Remove fish from bag. Pour marinade into a saucepan; bring to a boil and cook 1 minute.
3. Place fish on grill rack coated with cooking spray; cover and grill 4 minutes on each side or until fish flakes easily when tested with a fork.
4. Place 1/2 cup lettuce on each plate; top with fish. Spoon marinade over fish.
