GRILLED JAPANESE EGGPLANT This recipe came from an estate sale. I obtained it when I purchased the family collection from the Whitcomb Estate in Richardson Texas in 1994. Ingredients:
2 pounds japanese eggplant |
2 tablespoons olive oil |
1 teaspoon minced garlic |
1/2 teaspoon salt |
1 teaspoon freshly ground black pepper |
Directions:
1. Wash eggplant and pat dry then lightly coat with olive oil, garlic, salt and pepper. 2. Prepare a charcoal fire then place eggplant on grill over direct heat and cover with lid. 3. Turn several times during cooking which should take approximately 5 minutes. |
