Grilled Honey-Macadamia Mahi Mahi |

This recipe comes from a San Francisco School. Ingredients:
2 -8 ounces mahi mahi fillets |
1/2 teaspoon oil |
1/4 teaspoon salt |
1/8 teaspoon pepper |
3 tablespoons honey, diveded |
1/4 cup macadamia nuts, fine chopped and toasted |
Directions:
1. Rub fillets with oil; srpinkle both sides of fillets with salt and pepper. Brush 1 side of fillet with 1 1/2 tbsp honey. Place fillets in a greased grilling basket, brushed side up. Cook; covered with grill lid, over medium-hot coals (350-400) 7 minutes; turn basket, Baste fillets with remaining 1 1/2 tbsp honey, and sprinkle with nuts. Grill, covered 3-4 additional minutes till fish is flakey. serve immediately. |
