Grilled Herb Chicken With Roma Tomato Sauce (Cooking Light 4/07) |

Suggests serving over multigrain pasta Ingredients:
1 tablespoon olive oil |
1/3 cup onion, finely chopped |
1 garlic clove, minced |
2 1/4 cups plum tomatoes, chopped and seeded (1 lb) |
1/2 cup dry red wine |
2 teaspoons balsamic vinegar |
1 teaspoon salt, divided |
1/4 teaspoon fresh ground pepper, divided |
2 tablespoons fresh basil, chopped, divided |
1 tablespoon fresh thyme, chopped, divided |
4 (6 ounce) boneless skinless chicken breast halves |

Directions:
1. Heat oil in a medium saucepan over mediun heat. 2. Add onion and garlic, cook for 3 minutes until tender, stirring occasionally. 3. Stir in tomatoes, wine, vinegar, 1/2 tsp salt and 1/8 tsp pepper. 4. Bring to a boil then reduce heat and simmer 10 min until the sauce thickens, stirring occasionally. 5. Remove from heat and add 1 tbsp basil. 6. Prepare grill. 7. Combine thyme, 1 tbsp basil, 1/2 tsp salt, and 1/8 tsp pepper in a small bowl. 8. Coat chicken with cooking spray then sprinkle with the thyme mixture. 9. Coat grill with cooking spray and grill for 5 minutes on each side or until done. 10. Serve with tomato mixture. |
