Grilled Ham and Egg Salad Monte Cristos |

The hearty ham and toasted bread make this a deliciously different kind of egg salad sandwich. Ingredients:
6 hard-boiled eggs, chopped |
1 cup diced cooked ham |
1/2 cup finely chopped celery |
1 tablespoon minced onion |
1/2 cup mayonnaise |
2 teaspoons prepared mustard |
1 teaspoon prepared horseradish (or more) |
1/2 teaspoon salt |
1/4 teaspoon pepper |
12 slices whole wheat bread or 12 slices white bread |
cooking oil |
1/2 cup cornmeal |
1/2 cup all-purpose flour |
1 teaspoon baking powder |
1 teaspoon salt |
2 cups milk |
2 eggs, lightly beaten |
Directions:
1. Combine hard-cooked eggs, ham, celery, onion, mayonnaise, mustard, horseradish, salt and pepper; spread on six slices of bread. Top with remaining bread and set aside. 2. In a bowl, whisk batter ingredients until well blended. Heat about 1/2 inches of oil in a large deep skillet. Dip sandwiches into batter. 3. Fry in hot oil for 3 minutes on each side or until golden brown. Drain on paper towels. |
