Grilled Grouper with Pineapple Salsa |

Make Ahead. Serve with steamed Sugar Snap peas and warm whole wheat rolls. Ingredients:
1 (15-ounce) can pineapple tidbits in juice, drained |
1 small red bell pepper, finely chopped (about 1/2 cup) |
2 tablespoons chopped fresh mint or parsley |
1 tablespoon lime juice |
2 teaspoons finely chopped fresh jalapeño pepper |
1 teaspoon grated peeled fresh ginger or 1/4 teaspoon ground ginger |
1/2 teaspoon salt, divided |
1/4 teaspoon black pepper |
4 (4-ounce) grouper fillets |
cooking spray |
Directions:
1. Combine first 6 ingredients in a small bowl; stir in 1/4 teaspoon salt. Cover and set aside; chill overnight, if desired. 2. Prepare grill. 3. Sprinkle remaining 1/4 teaspoon salt and 1/4 teaspoon black pepper over fish; coat lightly with cooking spray. 4. Coat grill rack with cooking spray; place on grill over medium-hot coals (350° to 400°). Arrange fish on rack or in a grill basket coated with cooking spray; grill, uncovered, 5 minutes on each side or until fish flakes easily when tested with a fork. Remove fish from grill; top with pineapple mixture. |
