Ingredients:
1/4 cup reduced-fat mayonnaise |
2 1/2 teaspoons grated lemon rind |
1 1/2 tablespoons fresh lemon juice (about 1 small lemon) |
1 tablespoon chopped fresh oregano or 1 teaspoon dried oregano |
1/2 teaspoon minced garlic (about 1 clove) |
4 (4-ounce) skinned, boned chicken breast halves |
vegetable cooking spray |
Directions:
1. Combine first 5 ingredients in a small bowl, stirring until smooth. Brush mayonnaise mixture on both sides of chicken breast halves. 2. Coat grill rack with cooking spray; place on grill over medium-hot coals (350° to 400°). Place chicken on rack; grill, covered, 5 to 6 minutes on each side or until done. |
