Grilled Ginger Lamb Satays With Thai Sauce |

Spicy lamb satays with a lime,chili thai sauce. Times do not inlude 2-3 hrs. marinade time. Ingredients:
1 1/2 lbs lamb steaks (cut in strips) |
1 tablespoon ginger (chopped) |
2 garlic cloves (minced) |
1 tablespoon brown sugar |
1 tablespoon fish sauce |
3 teaspoons sesame oil |
2 tablespoons lime juice |
2 tablespoons sweet chili sauce |
2 tablespoons coriander (chopped) |
1 dried red chili pepper (seeded & finely chopped) |
1 tablespoon sesame seeds (toasted-optional) |
jasmine rice (steamed) |
Directions:
1. Combine lamb strips with gingr,garlic,sugar,fish sauce & sesame oil, refrigerate & marinate for 2-3 hours. 2. Thread lamb onto 8 bamboo skewers that have been soaked for 30 minute. 3. While lamb is in marinade, prepare dipping sauce. 4. Combine lime juice, chili sauce,corinader & chill. 5. Heat barbecue and cook skewers and cook for 3-4 minute on each side or until lamb is cooked. 6. Serve sprinkled with toasted sesame seeds (optional) and dipping sauce and steamed jasmine rice. |
