These grilled foil potatoes were made up by my wife, using fresh chives and onions from our garden. The potatoes in the photo are shown with chicken and vegetable skewers. The chicken was made with Elgourmand's Genuine Hawaiian Teriyaki Marinade recipe. Ingredients:
aluminum foil |
2 medium size wisconsin russet potatoes |
1 tbsp fresh chives, chopped |
1 tbsp butter |
1/4 tsp salt |
1/4 tsp pepper |
1 medium onion, diced |
cooking spray |
Directions:
1. Pre-heat a grill to Medium. 2. Tear off an 18 inch piece of aluminum foil and spray with cooking spray. 3. Cut one potato into bite size pieces and place on aluminum foil. 4. Add 1/2 tbsp chives, 1/2 tbsp butter, 1/8 tsp salt, 1/8 tsp pepper, and 1/2 of the onion. 5. Repeat the steps. 6. Wrap the potatoes in the foil. 7. Get another piece of aluminum foil, a little bigger, and wrap potatoes again. (To prevent burning) 8. Cook on the grill for 35 minutes, turning 3 to 4 times during the cooking process. Cooking time depends a lot on your grill. |
