Grilled Fish with Two-Tomato Salsa |

This recipe actually calls for 2 lbs of fish to serve 4. I prepared it with 12 oz. fish to serve 2, but kept the other ingredients in full. Ingredients:
1 large tomato, cored and diced |
1 1/2 cups yellow cherry tomatoes, diced |
2 tbsp cilantro, chopped |
1/4 tsp ginger |
3/4 tsp salt |
1 jalapeno pepper, seeded and minced |
1/4 cup olive oil |
1 lime |
1/2 cup red onion, chopped |
1 clove garlic, minced |
12 oz. swordfish steaks |
Directions:
1. Mix tomatoes, cilantro, ginger, 1/2 tsp salt, and jalapeno in medium bowl. 2. In a small measuring cup, combine olive oil, lime juice and rind, onion and garlic. Place fish in dish. Pour 1/2 of the oil mixture over the fish, turning to coat; marinate 1 to 2 hours. Stir remaining mixture into tomatoes. 3. Sprinkle fish with 1/4 tsp salt. Broil or grill fish 3 to 5 minutes per side until cooked through. Serve with salsa and lime wedges. |
