Neat little dish can be served as salad, veggie, appetizer etc Ingredients:
2 red bell peppers |
8 8 1/2 inch slices eggplant |
3 tablespoons evo or white truffle oil |
tablespoon red wine vinegar |
1 tablespoon chopped fresh oregano |
1/2 c. crumbled feta cheese |
salt and pepper |
Directions:
1. Coat 2 red bell peppers, cut into wedges, stems and seeds removed, and 8 1/2-inch slices eggplant with olive oil. 2. Grill; 3. arrange on a platter. 4. Top with 3 Tablespoon olive oil and 1 Tablespoon red wine vinegar. Add 1 Tablespoon chopped fresh oregano and 1/2 cup crumbled feta. 5. Season to taste with salt and pepper |
