Ingredients:
2 medium eggplants, sliced lengthwise
3 tablespoons extra virgin olive oil
salt to taste
pepper to taste
1 tablespoon capers
1 tablespoon fresh lemon juice
1/4 cup chopped fresh flat-leaf parsley
Directions:
1. Preheat grill to medium-high heat (350° to 400°). Drizzle both sides of eggplant with olive oil, and season to taste with salt and pepper. Grill 6 minutes on each side or until tender. Sprinkle with remaining ingredients. Drizzle with additional olive oil, if desired.
