When it's a grilling night, I like to cook the entire meal on the grill if possible. I have developed a couple of favorite side dishes for grilling. Of course, potatoes are at the top of the list! Goes great with fish.
Ingredients:
6 yukon gold potatoes
1 tbsp. olive oil
1 tbsp. fresh dill
2 tbsp. fresh parsley
1 tsp. garlic powder
shake on some salt and pepper
Directions:
1. Wash potatoes and chop into bite size pieces (no need to peel)
2. Boil potatoes for approximately 7 min. or until tender
3. Chop herbs (use food processor if you have one, otherwise be sure to chop very finely)
4. Drain water and pour potatoes into a gallon size zipper bag
5. Add all ingredients and shake to stir
6. Place potatoes in aluminum foil shiny side out and seal completely
7. Grill for about 10 minutes
8. Serve!
9. Note: I added a few shakes of McCormick Grill Mate Mesquite flavor to these last time and it added a yummy flavor.
