Grilled Cumin Chicken With Fresh Tomatillo Sauce |

Bring the heat of the Southwest to the dinner table with this delicious grilled chicken. Cooking Light! Ingredients:
2tsp olive oil |
1/2tsp ground cumin |
1/8 tsp pepper |
2 garlic cloves,minced |
4 skinless,boneless chicken breast halves |
1/2lb tomatillos |
1/2c chicken broth |
1/4c cilantro leaves |
1/4c chopped green onion |
2 tbs fresh lime juice |
1/2tsp sugar |
1/4tsp salt |
1 garlic clove,chopped |
1 jalapeno pepper,seeded and chopped |
1/4 tsp salt |

Directions:
1. Combine first 4 ingredients in large bag. Add chicken,seal and let stand 15 mins. 2. Discard husks and stems from tomatillos. Combine tomatillos and broth in small saucepan over med-high heat;cover and cook 8 mins. Drain;cool slightly.Combine tomatillos,cilantro and next 6 ingredients(through jalapenos) in food processor. Process till smooth. 3. Remove chicken from bag;discard marinade. Sprinkle chicken evenly with 1/4tsp salt. Place on grill rack coated with spray;grill 6 mins. each side or till chicken is done. Serve with tomatillo sauce. |
