From Cooking Light. Ingredients:
1 english cucumber |
1 tablespoon rice wine vinegar |
1 teaspoon dark sesame oil |
1/4 teaspoon kosher salt |
1/8 teaspoon crushed red pepper flakes |
Directions:
1. Cut cucumber into thirds crosswise. 2. Cut each piece into quarters lengthwise. 3. Coat cucumbers with cooking spray. 4. Grill for 6 min or til lightly charred and crisp-tender, turning occasionally. 5. Place cucumber in a bowl. 6. Add remaining ingredients and toss gently to combine. |
