adapted from Cabot Cheese, this is quite delcious and different from other grilled corn recipes because it has cheddar cheese in the recipe. The grill flavor imparts great taste. Everone seemed to love the recipe Great for barbecues and a summer side salad! Read more ! Ingredients:
6 ears of corn shucked |
1 red bell pepper |
olive oil |
seasonings of choice |
4 oz sharp cheddar cheese |
3 tbs lime juice |
1/4 cup olive oil |
chopped frsh herbs of choice: parsley or cilantro |
Directions:
1. Rub corn with some olive oil and seasoning and grill till done 2. Also grill the bell pepper 3. Cool both 4. Remove the corn from the cob 5. peel pepper and dice 6. Grate the cheese 7. Fold in cheese and herbs into corn 8. Mix olive oil and lime juice 9. Stir all well 10. season if needed with salt, pepper etc 11. Serve at room temperature 12. If chilling, let come to room temperature again |
