Grilled Corn And Black Beans Salad |

A versatile and colorful salad that can be served over chips or with chicken, salmon or steak. Very easy to make. 2001 Cooking Light Ingredients:
3 ears shucked corn |
1/2 c fresh lime juice (about 2 limes) |
1/3 c minced red onion |
1/3 minced fresh cilantro (i leave this out) |
3 tbl. white vinegar |
2 tsp. sugar |
2 tsp. ground cumin |
2 tsp. chili powder |
1 (15-ounce) can black beans, drained |
lime wedges (optional) |
Directions:
1. Prepare grill. 2. Place corn on a grill rack; grill 20 minutes or until corn is lightly browned, turning every 5 minutes. Cool. Cut kernels from corn; place in a bowl. 3. Add juice and remaining ingredients; stir gently. Cover and chill 1 hour. 4. Garnish with lime wedges, if desired. |
