From Easy Everyday Low Carb. OAMC Ingredients:
4 chicken breasts, skinless, boneless |
1 medium orange, sliced |
1 small eggplant, cut into 1 inch slices |
1 large red bell pepper, cut into 1 inch pieces |
1 medium zucchini, quartered lengthwise |
1 small sweet onion, cut in 1/2 inch piecces |
3/4 cup orange juice |
1/4 cup lemon juice |
3 tablespoons cooking oil |
2 tablespoons worcestershire sauce |
3/4 teaspoon ground cumin |
1/2 teaspoon onion powder |
1/4 teaspoon salt |
1/4 teaspoon black pepper |
2 garlic cloves, minced |
Directions:
1. Place chicken in plastic bag. combine marinade ingredients and pour over chicken. Add the orange slices to the bag. Set aside in the refrigerator for 6-24 hours. 2. Drain, discarding marinade. 3. Place chicken and vegetables on grill rack. Grill for 12-15 minutes or until no longer pink. 4. Grill vegetables 8-10 minutes or until tender. |
