Grilled Chile Pepper Cheeseburgers |

This recipe is from Once-A-Month Cooking by Mimi Wilson and Mary Beth Lagerborg. I'm adding it here so that I can plan my recipe list and shopping list for once-a-month cooking! Prep and cooking time are estimates, as I haven't made this yet. Ingredients:
1/3 cup green onion, finely chopped |
3 tablespoons nonfat plain yogurt |
2 tablespoons jalapeno peppers, seeded, finely chopped |
1/2 teaspoon black pepper |
1/2 teaspoon salt |
2 lbs ground beef |
6 ounces monterey jack pepper cheese, cut into 6-8 slices |
8 kaiser rolls, split and toasted |
Directions:
1. In a medium bowl, combine green onion, yogurt, jalapenos, pepper and salt. Add beef and mix well. 2. Shape beef mixture into 8 patties about 3/4 inch thick. Place wax paper between the patties and freeze in a 1-gallon freezer bag. 3. To prepare, thaw patties in the refrigerator. Grill until no pink remains in the center. Turn once. Top each patty with cheese the last 2 minutes of grilling time. |
