Grilled Chicken With Sesame Ginger Sauce |

Delicious but low-calorie chicken recipe, this originated from Eating Well. Sesame Ginger Sauce can also be used to top fish, tofu, or vegetables. Ingredients:
1/4 cup soy sauce |
2 tablespoons lemon juice |
1 tablespoon canola oil |
1 garlic clove, minced |
1 jalapeno pepper, seeded and minced |
2 teaspoons fresh ginger, minced |
1/2 teaspoon ground cumin |
6 boneless skinless chicken breasts |
1 teaspoon canola oil |
1/2 cup fresh ginger, minced |
2 teaspoons sugar |
1/3 cup water |
1/4 cup soy sauce |
1/4 cup rice vinegar |
1 tablespoon sesame oil |
Directions:
1. To make marinade: Combine soy sauce, lemon juice, oil, garlic, jalapeno, ginger and cumin in a plastic zipper bag. 2. Add chicken and seal bag. 3. Refrigerate a minimum of 2 hours or overnight. 4. To make Sesame Ginger Sauce: Heat oil in a small saucepan over medium heat. 5. Add ginger and sugar and a small amount of the water. 6. Cook until softened. 7. Remove from heat, add remaining ingredients. 8. Cover and refrigerate for a minimum of 2 hours or overnight. 9. Prior to serving, strain sauce (to remove minced ginger) and reheat. 10. Remove chicken from marinade and grill until no longer pink in center, about 5 min per side. 11. Thinly slice chicken and top with 1 tablespoon Sesame Ginger Sauce. |
