Grilled Chicken With Pinot Plum Sauce |

Cooking Light August 2004 Ingredients:
2 cups chopped ripe plums (about 3 small) |
1 cup pinot noir wine or 1 cup dry red wine |
2 tablespoons brown sugar |
1 tablespoon red wine vinegar |
1/8 teaspoon salt |
4 (6 ounce) boneless skinless chicken breast halves |
1/8 teaspoon salt |
1/8 teaspoon black pepper |
cooking spray |
Directions:
1. To prepare sauce, combine first 4 ingredients in a small saucepan (A); bring to a boil. Reduce heat; simmer 25 minutes or until thick, stirring occasionally (B). 2. Remove from heat; stir in 1/8 teaspoon salt. Pour into a small bowl; cool to room temperature. 3. Prepare grill to medium-high heat. 4. To prepare the chicken, sprinkle the chicken with 1/8 teaspoon salt and pepper. Place chicken on a grill rack coated with cooking spray. Grill 4 minutes on each side or until done. Serve chicken with plum sauce. |
