Simple Souvalaki marinade for all types of meat. Chicken always turns our moist and tasty. I usually serve two skewers with rice pilaf and salad. Can make smaller skewers for appetizer servings Ingredients:
12 wooden skewers, soaked |
11/2 lb. boneless skinless, chicken breast or tenders |
1 c onion, minced |
2 cloves garlic, minced finely |
1 lemon, juiced |
1 tbsp olive oil |
1 tsp. cumin |
2 bay leaves |
1 tsp. dried oregano |
Directions:
1. Cut each chicken into 5-6 chunks and put in a resealable plastic bag. 2. Mix together the oil, onion, garlic, lemon juice, cumin, bay leaves and oregano. 3. Pour the marinade over the chicken, seal and refrigerate 1-2 hours. Remove chicken from marinade and thread 5-6 chunks onto each skewer. 4. Grill until chicken is cooked through, about 7 minutes each side. |
