Grilled Chicken Salad

A simple, but slightly different chicken salad made even better by using left over grilled chicken, like this. Whole Grilled Chicken
Ingredients:
about 3-4 cups cooked chicken, cubed, skin removed(the more flavorful the chicken, the more flavorful the salad
2 celery stalks, sliced thin
1 medium sweet onion, diced(vidalia, if possible
couple t smoked paprika
1-2 cups dried cranberries(i used a pomegranate enhanced variety, and i highly recommend them!)
about 1 cup mayonnaise
2t favorite mustard(i used a german with herbs)
1 lemon, juice only
couple dashed of rooster or other hot sauce
fresh ground pepper
Directions:
1. Combine all ingredients well.
2. Refrigerate until ready to serve.
3. Serve over lettuce or in sammiches.
