12 oz boneless skinless chicken breast halves, net from 1 pound fresh |
1 tablespoon olive oil |
1 cup (shredded part skim) mozzarella cheese |
1/4 cup grated parmesan cheese |
1/2 cup sliced basil leaves |
2 medium tomatoes, sliced |
Directions:
1. Preheat outdoor or indoor grill or oven broiler. Brush chicken with oil. 2. In a bowl, combine cheeses and basil; set aside. 3. Grill/broil chicken for 4 to 5 minutes per side; top with tomato slices and cheese/basil mixture; lightly cover with aluminum foil and cook for about 2 minutes or until cheese melts. |
