I haven't tried this one yet,. This came to me a few days ago in an e-mail Ingredients:
1/4 cup freshly squeezed lime juice |
1 small shallot, chopped |
1/4 cup olive oil |
1/4 tsp pepper |
4 boneless, skinless, chicken breasts, pounded thinly |
salt |
1/2 pound arugula |
2 large tomatoes, diced |
1 small red onion, peeled, halved and thinly sliced |
2 tbsp red wine vinegar |
2 tbsp olive oil, plus additional for garnish |
lime halves, for garnish |
Directions:
1. Whisk together lime juice, shallot, olive oil and pepper in a large baking dish. 2. Add the chicken, 3. turn to coat and marinate in the refrigerator for 30 minutes. 4. Preheat grill to high. 5. Remove chicken from marinade, season with salt on both sides and grill for 8 to 10 minutes per side or until golden brown and just cooked through. 6. Combine arugula, tomatoes and onions in a large bowl, toss with the vinegar and oil and season with salt and pepper, to taste. 7. Place each paillard on a large plate, 8. drizzle with olive oil and top with some of the arugula-tomato salad. 9. Garnish with lime halves |
