Grilled Cheese with Olivada

Ingredients:
2 slices white or egg bread ( challah)
green or black olivada
small amount of mayonnaise
swiss cheese
thin slices of ripe tomato
salt and pepper
Directions:
1. Spread each slice of bread with olivada, and a little bit of mayonnaise. Sandwich a slice or two of cheese in between the bread, with or without a slice of tomato.
2. Saute or grill sandwich on each side until cheese has melted.
