Ingredients:
4 (6-ounce) skinless, boneless chicken breast halves |
2 teaspoons lime juice |
1 teaspoon vegetable oil |
2 teaspoons jerk seasoning |
cooking spray |
Directions:
1. Place chicken between 2 sheets of heavy-duty plastic wrap, and flatten to 1/4-inch thickness, using a meat mallet or rolling pin. 2. Combine lime juice and oil; brush over both sides of chicken. Rub both sides of chicken with jerk seasoning. 3. Prepare grill. 4. Place chicken on grill rack coated with cooking spray; grill, covered, 5 to 6 minutes on each side or until done. 5. Tip: Jerk seasoning is a Jamaican seasoning blend often used on grilled meats. The blend is generally a combination of chiles, thyme, cinnamon, allspice, garlic, and onions. Look for jerk seasoning in the spice section of the supermarket. |
