I had this recipe for about a year and just tried it. Wow! It's the cat's meow and I just love this. I never grilled lettuce before. I only used one head of Romaine which was plenty for the 2 or us. We polished off the whole thing. Read more . I love the warm lettuce, smokey flavor and the brightness the lemon gives to the fruity olive oil. Do try this if you want something different and delish. I love anchovies but omit if you don't want them I also added thinly sliced red onion to the basic recipe. Maybe some sliced black olives next time.
Ingredients:
3 heads of packaged romaine lettuce
crushed garlic
extra virgin olive oil
salt and pepper
juice of a fresh lemon
anchovy with a little of the canned oil
some shaved parmesan
red onion ( my addition )
Directions:
1. Separate the leaves of clean romaine lettuce and lay them in a 9 x 13 pan.
2. Drizzle on olive oil, salt and pepper and crushed garlic
3. Toss lettuce to coat well
4. After you are done grilling your burgers, steak, chicken etc, lay on the romaine leaves and grill them over high heat till they get a little brown
5. Remove to a platter, squeeze on fresh lemon juice and drizzle a bit of anchovy oil and pieces of anchovy over the salad.
6. Garnish with shaved Parmesan if desired
7. Serve while warm
8. Note: no croutons on this salad
9. Enjoy!
