Grilled Bulgar Kefta With Herbs And Chilies

Ingredients:
1/2 cup fine grained bulgur
1 pound medium fat ground lamb
1 cup minced red onion
1 jalapeno seeded and minced
1 small sweet red pepper seeded and minced
2 teaspoons crushed garlic
1/2 teaspoon crushed red pepper flakes
1-1/2 teaspoons freshly ground cumin
1/2 cup chopped flat leaf parsley
1/2 cup chopped fresh mint leaves
1/2 teaspoon salt
1 teaspoon freshly ground black pepper
2 tablespoons olive oil
Directions:
1. Wash bulgur then put it in a bowl and sprinkle generously with enough water to moisten.
2. Let stand 30 minutes.
3. Add all the remaining ingredients then season with salt and pepper and knead to blend.
4. Mix to a paste in food processor.
5. Shape egg size pieces in thick oval patties.
6. Grill on both sides until golden or cook in cast iron skillet heated very hot and lightly oiled.
