Grilled Bison Steaks with Spiced Yogurt |

This is a Moroccan recipe that originally called for 4 thick lamb loin chops. I substituted the bison steaks for less fat and cholesterol. Ingredients:
1 cup yogurt |
3/4 tbsp ground coriander |
1/2 tsp ground ginger |
1/2 tsp ground turmeric |
1/2 tsp black pepper |
1/2 tsp ground cumin |
1/4 tsp ground cinnamon |
1/8 tsp ground cloves |
1/8 tsp cayenne |
12 oz bison steak |
1 tbsp extra virgin olive oil |
Directions:
1. Mix yogurt and spices. Slater 1/2 of the yogurt mixture over the steaks, cover and refrigerate 4-8 hours. Cover and refrigerate the remaining yogurt mixture. 2. Preheat grill on medium heat. 3. Remove excess marinade from steaks. Brush steaks with olive oil and grill about 5 minute per side, depending on the level of desired doneness. Transfer the steaks to a plate and let rest 5 minutes. 4. Serve over couscous and garnish with the remaining yogurt mixture. |
