Quick appetizer or light lunch. Variations allow you to customize to your taste preferences and keep this in regular rotation in your menus. You could add tomato, onion, any thinly sliced meat. Ingredients:
2 avocados, ripe |
1 teaspoon lime juice |
2 teaspoons olive oil |
4 slices bread, thick |
4 slices parmesan cheese, slice |
salt |
4 ham slices, thin (optional) |
Directions:
1. Peel avocado, brush with line juice and olive oil. Slice bread, brush with olive oil. Grill both just long enough to get grill marks. Top bread with parmesan, place ham slice next, then mash avocado on top. Salt to taste. Serve immediately. |
